DJ’S Texas Style BBQ is a family run business that opened July of 2004. We offer traditional Texas Style BBQ cooked the old fashioned way, slow and low on native Maine hardwoods in our Texas built pit. (And yes, all watched over by a native Texan and Pit Master from Caldwell, Texas).
Here at DJ'S, we cook our BBQ much the same as it was done when I was a kid back in Caldwell some 50 plus years ago. No Gas or Charcoal assist here, we believe BBQ is best when cooked over a low fire for long periods of time. No doubt the hardest way possible, but undoubtedly, the Best way to tantalize your taste buds and bring a Taste of Texas to you and the Great State of Maine!
Our woods of choice, (all native to our state), are Oak and Cherry blended together for a really extraordinary smoked flavor. Nothing is rushed, Briskets cook upwards of sixteen hours before they are deemed ready for "No Teeth Required" dining. Pork Butts and Ribs cook to the same consistency requiring a bit less time on the pit, averaging ten to twelve hours for Butts and around six for ribs.
All our meats are first seasoned with our special dry rub some twelve to twenty-four hours prior to cooking to achieve the perfect blend of seasoning and smoke, Texas Style. Our signature Texas Hot Links, (a Beef and Pork slightly hot sausage) is made locally to our recipe, and our sauce, (a closely guarded Family recipe), is completely made from scratch, and is the perfect compliment for any of our meats.
