Componere Fine Catering’s Executive Chef Ethan Mantle graduated with honors from the Culinary Institute of America in Hyde Park, New York. He apprenticed at the famous Georges Blanc in Vonnas, France and has worked in some of the country’s top kitchens such as Fleur de Lys and Farallon in San Francisco.
