Rachael's Plaza Bakery is owned and operated by Jim and Nancy Holland, first opened at the end of July
2010. This is the first bakery for the couple and it is ever evolving. With the help of customer input, the menu has added different sizes and products. All suggestions are welcome and appreciated.

Our History
Jim was a long time computer engineer who decided to go to culinary school. Although he loves cooking and considered opening a restaurant, he fell in love with baking when he took classes for his baking certification. Jim attended Collin County Community College and excelled in his courses. He also took many online courses through the American Institute of Baking International (AIB International) in Manhattan, Kansas. He apprenticed at The Original Pancake House (various sites) and then worked as a baker at Market Street Supermarket in Allen and Central Market in Plano.

Nancy is a telecom specialist but baking was her first love. Baking came naturally and her family never had "store bought" pastries. She continues to hold a telecom professional career but bakes daily in the evening to help Jim get ready for the bakery day and works in the bakery store on Saturdays.

Many of the recipes the couple use are family favorites but many have evolved into larger, production - size runs with the help of Jim's background.
